  • 1/2 red onion, chopped

  • 3 carrots, peeled and sliced

  • 3 cloves garlic, pressed

  • 3 stalks of celery, chopped

  • 5 cups beef stock

  • 1 can diced tomatoes

  • 1/2 cup barley

  • Your choice of seasonings


  • Begin by adding chopped onion, celery, carrots, and garlic to a stock pot and sautee with olive oil
  • Add beef stock, cover, and let cook on medium heat until vegetables are tender, about 20 minutes
  • Add in diced tomatoes and barley, let cook for 15 more minutes
  • Add seasoning to taste and serve with bread and butter
