Red Curry Lentils

Ingredients

  • 1 1/2 cup lentils

  • 2 cups chicken broth (with a squirt of liquid aminos)

  • 2 large carrots – chopped

  • 1/2 red onion – chopped

  • 1 medium zucchini – sliced and cut into fourths

  • 3 garlic cloves

  • 1 can tomato sauce

  • 3/4 cup coconut milk

  • 3 tablespoons red curry paste

  • curry powder

  • smoked paprika

  • rogan josh

  • olive oil

  • cilantro

Directions

  • Add onion and carrots to pot with olive oil and saute
  • Add garlic (crushed) and seasonings (rogan josh, smoked paprika, curry powder)
  • Add in curry paste and stir
  • Add lentils and chicken broth, cover, and let cook for 10-15 minutes
  • Add in tomato sauce and zucchini and let simmer for 10-15 minutes
  • When lentils are tender, turn off the heat, add coconut milk, stir, and serve.
  • Garnish with cilantro
