Red Curry Lentils

1 1/2 cup lentils
2 cups chicken broth (with a squirt of liquid aminos)
2 large carrots – chopped
1/2 red onion – chopped
1 medium zucchini – sliced and cut into fourths
3 garlic cloves
1 can tomato sauce
3/4 cup coconut milk
3 tablespoons red curry paste
curry powder
smoked paprika
rogan josh
olive oil
cilantro
Directions
- Add onion and carrots to pot with olive oil and saute
- Add garlic (crushed) and seasonings (rogan josh, smoked paprika, curry powder)
- Add in curry paste and stir
- Add lentils and chicken broth, cover, and let cook for 10-15 minutes
- Add in tomato sauce and zucchini and let simmer for 10-15 minutes
- When lentils are tender, turn off the heat, add coconut milk, stir, and serve.
- Garnish with cilantro
