Here is a wonderful addition to our “pinch of indulgence” we mentioned. This recipe was tried, modified, and perfected to make a tasty cookie that everyone will enjoy! They stay soft, yet firm, and feel light in your belly. It is recommended that the dough is chilled for at least an hour before baking. I recommend whipping up a quick batch and then bake fresh cookies for dessert after a dinner party!
Chocolate Chunk Cookies

¾ cup softened salted butter
¾ cup brown sugar
¼ cup coconut sugar
1 large egg
2 tsp vanilla extract
1 cup all purpose flour
1 cup Gluten Free 1-1 ratio baking flour
1 tsp baking soda
2 tsp arrowroot powder
½ tsp salt
1½ tsp cinnamon-sugar mix or pie spice mix
1 cup chocolate chunks
Directions
- In a large mixing bowl, combine butter and sugar and mix well
- Add in egg and vanilla extract and mix well
- In a separate bowl, combine flour, salt, baking soda, arrowroot powder, and spice mix
- Begin to add the dry ingredients to the wet ingredients, a small amount at a time, and mix until a dough is formed.
- Add in chocolate chunks
- Store dough in refrigerator for at least one hour
- When ready to bake:
- Preheat oven to 350 degrees F
- Line baking sheets with parchment paper
- form dough into cookie form
- Bake cookies for 12-14 minutes
- Remove from oven and allow to set for 5 minutes
- Enjoy!
