Apple Cinnamon Muffins

Apple Cinnamon Muffins

Warm these muffins up and have for breakfast, dessert, or a snack. It’ll put a smile on your face.

Ingredients

  • For Apple Slices
  • 1 large apple cut into cubes

  • ¼ cup lemon juice

  • cinnamon spice

  • 1 Tblsp honey

  • For Crumble Topping
  • ½ cup brown sugar

  • ¼ cup flour

  • 2 Tblsp Oats

  • pinch of salt

  • cinnamon spice

  • 2 Tblsp salted butter (melted)

  • For Muffin Batter
  • 1 cup whole wheat flour

  • 1 cup unbleached white flour

  • 3 tsp baking powder

  • ½ tsp salt

  • ¾ cup brown sugar

  • ¼ cup coconut sugar

  • 1 cup almond milk

  • ¼ cup liquid coconut oil

  • 1 egg

Directions

  • Preheat oven to 400 degrees F
  • Toss together all the ingredients for the Apple Slices, and set aside
  • Combine dry ingredients. of Crumble into a bowl and mix together
  • Add in the melted butter, mix well and set aside
  • Sift together wheat and white flour, baking powder, and salt
  • Add in the brown sugar and coconut sugar and mix
  • Add in milk, oil, and eggs and mix together
  • Toss in apple slices
  • Spray muffin tin with cooking spray or oil
  • Fill muffin tray ¾ full with muffin mixture
  • Top with a spoonful of crumble
  • Bake in oven for 25 minutes
  • Enjoy!
