Apple Cinnamon Muffins

Everyone will love this delicious recipe for Apple Cinnamon Muffins. Perfect for any time of year, bring these muffins to your next get together, they are sure to be a hit!

Apple Cinnamon Muffins

Warm these muffins up and have for breakfast, dessert, or a snack. It'll put a smile on your face.
  • For Apple Slices:
  • 1 large apple cut into cubes
  • ¼ cup lemon juice
  • cinnamon spice
  • 1 Tblsp honey
  • For Crumble:
  • ½ cup brown sugar
  • ¼ cup flour
  • 2 Tblsp Oats
  • pinch of salt
  • cinnamon spice
  • 2 Tblsp salted butter (melted)
  • For Muffins:
  • 1 cup whole wheat flour
  • 1 cup unbleached white flour
  • 3 tsp baking powder
  • ½ tsp salt
  • ¾ cup brown sugar
  • ¼ cup coconut sugar
  • 1 cup almond milk
  • ¼ cup liquid coconut oil
  • 1 egg
  1. Preheat oven to 400 degrees F
  2. Toss together all the ingredients for the Apple Slices, and set aside
  3. Combine dry ingredients. of Crumble into a bowl and mix together
  4. Add in the melted butter, mix well and set aside
  5. Sift together wheat and white flour, baking powder, and salt
  6. Add in the brown sugar and coconut sugar and mix
  7. Add in milk, oil, and eggs and mix together
  8. Toss in apple slices
  9. Spray muffin tin with cooking spray or oil
  10. Fill muffin tray ¾ full with muffin mixture
  11. Top with a spoonful of crumble
  12. Bake in oven for 25 minutes
  13. Enjoy!
